Marinated Chicken Tenders on Toothpicks

This is an interesting marinade, both sweet and spicy with a nutty undertone from the sesame seed oil. The snacks can be made on a charcoal or gas grill, or under the broiler. When you want to fill your family with energy, in the form of good protein, try this as a snack, or lunch.

Serves 6–8 as a snack; serving size 2–3 tenders

1 pound chicken tenders, cut in bite-sized pieces, on toothpicks.

18 wooden toothpicks, soaked for 20 minutes in warm water

1 tablespoon Toasted Sesame Seed Oil (Page 238)

½ cup orange juice, no sugar added

3 tablespoons tamari sauce

3 tablespoons Chili Sauce (page 240)

1 teaspoon Basic Mustard (page 241)

  • Cut the tenders into one-inch pieces and put one or two on each presoaked toothpick. In a bowl whisk the rest of the ingredients together and coat each piece of chicken.

  • Cover the bowl and marinate, refrigerated for at least 60 minutes, or up to 3 hours. Preheat broiler or grill to 400°F.

  • Grill or broil the chicken tenders for about 5 minutes per side, depending on the thickness. Turn them often until nicely browned.
