Watermelon-Lime Sorbet

If you don't have an ice cream maker, freeze this in your freezer.

Yields 6 servings; serving size ½ cup

2 cups sweet watermelon, seeds removed

Juice of 1 lime

2 tablespoons Splenda

½ teaspoon salt

  • Combine the melon, Splenda, lime juice, and salt in your food processor.

  • Following the directions on an ice cream maker, freeze the sorbet. If you don't have an ice cream maker, freeze it in a baking dish in your regular freezer. Break it up with a fork every 30 minutes.

Unique Cocktail Sorbets

Any good fruit sorbet can be turned into a cocktail with the addition of some vodka. Citrus-flavored vodka imparts a particularly unique flavor. Pear and lemon are delightful, and the watermelon-lime sorbet is delicious with the addition of citron-flavored vodka.
