Baked Stuffed Apples

This is delicious plain with whipped cream or ice cream. It makes an excellent brunch dish.

4 large apples, rinsed and polished

2 teaspoons DiabetiSweet Brown

½ teaspoon ground cinnamon

4 teaspoons chopped raisins

4 teaspoons chopped walnuts

1 teaspoon finely grated lemon or orange zest

4 teaspoons unsalted butter, melted

½ cup apple juice with no sugar added, plus water if needed

  • Preheat the oven to 350°F. Prepare a baking dish with nonstick spray.

  • Using an apple corer or a grapefruit spoon, carve a channel down the center of each apple, leaving a base at the bottom to prevent the filling from falling out of the apple.

  • In a bowl, mix the DiabtiSweet Brown, cinnamon, raisins, walnuts, zest, and butter together. Fill the apples.

  • Place the apples in a baking dish. Add the juice to the bottom of the dish. Cover loosely with aluminum foil and bake for 40 minutes. Add water to the apple juice if the pan gets dry.

  • Serve hot or warm with whipped cream or sugar-free ice cream.

Filling Baked Apples

Experiment with the fillings. Use different citrus zests. Try currants instead of raisins or chop up some dried figs or apricots and substitute them for the raisins. Green apples are very low in natural sugar, so opt for them instead of the sweeter varieties.
