Simple Sprouts Stir-Fry

The trick to stir-frying mung bean sprouts is to go light on the seasonings and not to overcook them.

INGREDIENTS | SERVES 3 to 4

  • 3 cups mung bean sprouts
  • 1 tablespoon vegetable or peanut oil
  • 2 thin slices ginger
  • 1 tablespoon soy sauce
  • ¼ teaspoon salt
  • ½ teaspoon granulated sugar
  • ½ teaspoon Asian sesame oil, optional
  1. Rinse the mung bean sprouts and drain thoroughly.

  2. Heat a wok or skillet over medium-high heat until it is nearly smoking and add the oil. When the oil is hot, add the ginger. Brown for 2 to 3 minutes and then remove from the pan.

  3. Add the mung bean sprouts. Stir-fry for a minute, stirring in the soy sauce. Stir-fry for a bit longer, stirring in the salt, sugar, and sesame oil if using. Serve hot.
