Quick Fried Green Tomatoes

Picked from the vine before they have fully ripened, firm green tomatoes are a great addition to stir-fries.

INGREDIENTS | SERVES 4

  • ½ teaspoon salt
  • Freshly ground black pepper to taste
  • ½ teaspoon dried oregano
  • ¼ cup cornmeal
  • 3 green tomatoes, cut in slices
  • ½ inch thick
  • 2 tablespoons olive oil
  1. Combine the salt, black pepper, oregano, and cornmeal in a bowl.

  2. Dredge the tomato slices with the cornmeal mixture.

  3. Heat a wok or skillet on medium heat until it is nearly smoking. Add the oil.

  4. When the oil is hot, add the green tomatoes. Stir-fry for about 2 minutes or until the tomatoes turn golden brown. Serve hot.
