Quick Fried Green Tomatoes
Picked from the vine before they have fully ripened, firm green tomatoes are a great addition to stir-fries.
INGREDIENTS | SERVES 4
- ½ teaspoon salt
- Freshly ground black pepper to taste
- ½ teaspoon dried oregano
- ¼ cup cornmeal
- 3 green tomatoes, cut in slices
- ½ inch thick
- 2 tablespoons olive oil
Combine the salt, black pepper, oregano, and cornmeal in a bowl.
Dredge the tomato slices with the cornmeal mixture.
Heat a wok or skillet on medium heat until it is nearly smoking. Add the oil.
When the oil is hot, add the green tomatoes. Stir-fry for about 2 minutes or until the tomatoes turn golden brown. Serve hot.
