Coconut-Scented Rice
Replacing the water with coconut milk, chicken broth, or another liquid is a quick and easy way to add extra flavor to plain cooked rice. You could also use scented basmati or jasmine rice in this recipe for a different flavor.
INGREDIENTS | YIELDS 3 cups
- ¾ cup coconut milk
- ¾ cup water
- 1 cup long-grain rice
- 1 teaspoon sliced ginger
- 1 tablespoon brown sugar
- Salt to taste
Bring the coconut milk, water, rice, and ginger to a boil in a saucepan over medium heat. When the water is boiling, stir in the brown sugar and the salt.
Partially cover the pot and lower the heat to medium-low. Cook until most of the liquid is absorbed.
Cover and continue cooking on low heat until the liquid is fully absorbed. Remove the rice from the heat and let sit, covered, for 5 minutes.
Use a fork to fluff the rice before serving.
