Beef Broth and Tomatoes Soup

This recipe, similar to French onion soup, is also good served with Swiss cheese.

SERVES 6

INGREDIENTS

  • 1 pound yellow onions
  • 3 shallots
  • 6 cloves garlic
  • 1 (14-ounce) can whole plum tomatoes
  • ½ teaspoon sugar
  • Salt to taste
  • ½ teaspoon black pepper
  • 6 cups Basic Beef Broth
  • 6 slices French bread (optional)
  • 1 cup grated Gruyère cheese (optional)
  1. Thinly slice the onions, shallots, and garlic. Drain the tomatoes and slightly mash them.

  2. In a soup pot, warm the olive oil. Add the onions, shallots, and garlic; sauté for 3 to 5 minutes, stirring often.

  3. Add the sugar and seasonings, stirring almost constantly until the onions are dark brown (caramelized).

  4. Stir in the tomatoes and beef broth. Bring to a boil, reduce to a simmer, and cook for 30 minutes.

  5. Toast the bread and grate the cheese. Place a bread slice and some cheese in each serving bowl, then ladle soup on top.
