Beef Broth and Tomatoes Soup
This recipe, similar to French onion soup, is also good served with Swiss cheese.
SERVES 6
INGREDIENTS
- 1 pound yellow onions
- 3 shallots
- 6 cloves garlic
- 1 (14-ounce) can whole plum tomatoes
- ½ teaspoon sugar
- Salt to taste
- ½ teaspoon black pepper
- 6 cups Basic Beef Broth
- 6 slices French bread (optional)
- 1 cup grated Gruyère cheese (optional)
Thinly slice the onions, shallots, and garlic. Drain the tomatoes and slightly mash them.
In a soup pot, warm the olive oil. Add the onions, shallots, and garlic; sauté for 3 to 5 minutes, stirring often.
Add the sugar and seasonings, stirring almost constantly until the onions are dark brown (caramelized).
Stir in the tomatoes and beef broth. Bring to a boil, reduce to a simmer, and cook for 30 minutes.
Toast the bread and grate the cheese. Place a bread slice and some cheese in each serving bowl, then ladle soup on top.
