New Hampshire Goulash

3 tablespoons oil

3 pounds beef stew meat, cut in 1-inch cubes

3 cups chopped onions

1 cup chopped green peppers

1 clove garlic, minced

1 (16-ounce) can tomato sauce

1 tablespoon chili powder

½ teaspoon soy sauce

2 (5-ounce) cans mushrooms

1 tablespoon paprika

3 tablespoons brown sugar

¼ teaspoon pepper

1½ cups sour cream (optional)

Cooked egg noodles, buttered

  • Heat the oil in a large, heavy skillet on medium heat, and brown the meat well on all sides. Add all the remaining ingredients except the sour cream and noodles; mix well. Cover and cook at a low simmer for about 2½ to 3 hours, until beef cubes are tender.

  • Stir in the sour cream just before serving (if using). Serve over hot buttered noodles.

Serves 6

For a nice variation to this recipe, try substituting cooked rice for the noodles.
