Asian Pork Broth

Don't have any pork spare ribs handy? Substitute pork chops and still ensure a tasty broth.

INGREDIENTS | YIELDS 8–10 cups

  • 2 pounds pork spare ribs
  • 3 leeks
  • 12 cups cold water
  • 1 bunch celery, chopped
  • 8 black peppercorns
  • 1-inch piece ginger root
  • 2 teaspoon soy sauce
  1. Separate the spare ribs. Chop the leeks coarsely (white and light green parts only).

  2. In a soup pot combine the pork, leeks and, water. Bring to a boil, then reduce to a simmer; cook for 1¾ hours, skimming off the impurities and the fat regularly.

  3. Add the peppercorns, unpeeled ginger root, and soy sauce. Simmer for ½ hour. Discard all solids.

  4. Strain the broth thoroughly. Use some; freeze some. (Before freezing or refrigerating the broth, cool it to room temperature by immersing the pot in a bath of cold water.)
