Very Quick Sausage and Vegetable Soup

2 cups Basic Beef Broth (see recipe on page 2)

1 (14½-ounce) can Italian stewed tomatoes, including liquid

1½ cups water

2 cups frozen hash brown potatoes

1 (10-ounce) package frozen mixed vegetables

½ pound (8 ounces) smoked sausage, sliced

⅛ teaspoon pepper

Salt to taste

2 tablespoons grated parmesan cheese (optional)

Combine the broth, undrained tomatoes, and water in a large saucepan. Bring to a boil. Stir in the potatoes, vegetables, sausage, pepper, and salt to taste. Return to boiling. Reduce heat and simmer, covered, for 5 to 10 minutes. Sprinkle with cheese when in bowls.

* Prep time: 15 minutes; cooking time: 20 minutes

Serves 4

While the grated parmesan cheese is considered optional for this recipe, it is highly recommended.
