Spring Asparagus Soup

1 bunch thin spring asparagus

4 cups shrimp broth

Raw peas (optional)

Sour cream (optional)

Chop the asparagus into 1-inch lengths, keeping the tips separate. Bring the broth to a simmer and add all the asparagus except for the tips; simmer for 4 minutes. Add the tips and cook 1 additional minute. Pour into bowls and toss in a few raw peas. Top each bowl with a dollop of sour cream.

* Prep time: 5 minutes; cooking time: 10 minutes

Serves 4

Try some variety with this soup. Miso Broth, Lobster Broth, or Basic Vegetable Broth can be substituted for the Shrimp Broth.
