Curried Chicken Soup

If you transfer the egg back and forth between your cracked shells, the yolk with separate itself out.

SERVES 2

INGREDIENTS

  • 1 tablespoon butter
  • 1 teaspoon curry powder
  • ¾ tablespoon flour
  • 1½ cups Basic Chicken Broth
  • Paprika
  • 1 egg yolk
  • ¼ cup whole milk
  • ¼ cup cooked chicken, cut into small pieces
  • Fresh chopped chives (optional)
  1. Melt the butter in a saucepan. Add the curry and the flour and stir, cooking for 1 to 2 minutes. Pour in the broth and bring to a boil. Add paprika to taste. Turn the heat down to low.

  2. In a small bowl, beat together the egg yolk and the milk. Gradually whisk this into the broth mixture. Stir in the chicken and heat on low for 5 minutes. Garnish with chives and serve.
