Curried Chicken Soup
If you transfer the egg back and forth between your cracked shells, the yolk with separate itself out.
- 1 tablespoon butter
- 1 teaspoon curry powder
- ¾ tablespoon flour
- 1½ cups Basic Chicken Broth
- 1 egg yolk
- ¼ cup whole milk
- ¼ cup cooked chicken, cut into small pieces
- Fresh chopped chives (optional)
Melt the butter in a saucepan. Add the curry and the flour and stir, cooking for 1 to 2 minutes. Pour in the broth and bring to a boil. Add paprika to taste. Turn the heat down to low.
In a small bowl, beat together the egg yolk and the milk. Gradually whisk this into the broth mixture. Stir in the chicken and heat on low for 5 minutes. Garnish with chives and serve.
