Scandinavian Fruit Soup

Serve hot in mugs or as a cold soup. It keeps well refrigerated or frozen.

INGREDIENTS | SERVES 8–10

  • ¼ cup tapioca
  • 1 cup dried peaches
  • 1 cup prunes
  • 1 cup dried cherries
  • 2 cups raisins or currants
  • 2 small tart apples
  • 1 cup dried apricots
  • ½ cup sugar
  1. Using a large soup pot, combine the tapioca, peaches, prunes, cherries, and raisins. Cover with cold water. Bring to a boil.

  2. Meanwhile, dice the apples. Add them to the pot, reduce to a simmer, and cook for 20 minutes, stirring often.

  3. Add the apricots and the sugar, simmering and stirring often until the tapioca is transparent but not mushy. Add water to reach the desired consistency.
