Macaroni and Ham Soup

This homemade soup is almost as easy as opening a can. If you don't have leftover ham in the fridge, you can buy packaged, diced ham in the supermarket meat department.


  • 6 cups chicken broth
  • 1 (15-ounce) can small-diced tomatoes
  • 1 cup diced ham
  • ⅔ cup uncooked elbow macaroni
  • Salt and pepper to taste
  • Grated cheese for garnish
  1. In a soup pot, combine broth, tomatoes, and ham; bring to a boil. Reduce heat; simmer 10 minutes.

  2. Over high heat, return to a boil; stir in macaroni. Reduce heat to medium high; simmer until macaroni is tender, about 8–10 minutes.

  3. Add salt and pepper to taste. Ladle into bowls; allow to cool slightly. Sprinkle on grated cheese; serve.
