White Chili Pie
Aged Manchego is a firm, dry cheese similar to good Parmesan. Find it in the imported cheese case at your supermarket.
INGREDIENTS | SERVES 4
1 recipe White Chicken Chili (Page 150)
1 egg, beaten
2 refrigerated pie crusts
1 cup crumbled aged Manchego cheese
Heat chicken chili over medium low heat; stir until most of broth has evaporated. Pour egg into chili; stir quickly to distribute egg evenly.
Preheat oven to 350°F. Press 1 pie crust into a greased deep-dish pie pan. Using a slotted spoon, fill pie crust with chili. Sprinkle cheese over filling; cover with second crust. Cut slits into top crust; place on foil-covered baking sheet. Bake 40 minutes, or until crust is brown and pie is bubbling. Let stand 10 minutes before serving.
