White Bean and Bacon Soup
Cut this recipe in half for a fast, filling lunch for one. Or you can freeze half for later.
INGREDIENTS | SERVES 2–3
- 2 cups chicken broth
- 2 (15-ounce) cans white beans
- 1 (15-ounce) can tomatoes with oregano and garlic
- 4 strips cooked bacon
- Salt and pepper to taste
In a saucepan, combine broth, beans, and tomatoes; bring to a boil over medium-high heat.
Crumble in bacon; reduce heat to medium. Simmer 5 minutes.
Season with salt and pepper. Serve in soup mugs with breadsticks or muffins.
