Fab Fast Barbecue Stew

Different brands of prepared shredded BBQ pork offer different levels of spice, sweetness, and tanginess. Experiment to find the brand that suits your taste.

INGREDIENTS | SERVES 4

  • 2 sweet potatoes, peeled and diced
  • 1 (18-ounce) tub prepared shredded BBQ pork
  • 1 (15-ounce) can chili-seasoned pinto beans
  • 1 cup corn kernels
  • ½ cup water
  • 1 teaspoon honey mustard
  • 1 cup shredded Cheddar cheese
  1. Place sweet potatoes in a heavy saucepan with enough water to cover. Bring to a boil; cook just until tender, about 10 minutes.

  2. Drain; return potatoes to pan. Add pork, beans, corn, and water; stir in honey mustard. Cook over medium heat, stirring occasionally, 10 minutes.

  3. Pour into bowls; sprinkle with cheese. Serve with cornbread.
