Fab Fast Barbecue Stew
Different brands of prepared shredded BBQ pork offer different levels of spice, sweetness, and tanginess. Experiment to find the brand that suits your taste.

- 2 sweet potatoes, peeled and diced
- 1 (18-ounce) tub prepared shredded BBQ pork
- 1 (15-ounce) can chili-seasoned pinto beans
- 1 cup corn kernels
- ½ cup water
- 1 teaspoon honey mustard
- 1 cup shredded Cheddar cheese
Place sweet potatoes in a heavy saucepan with enough water to cover. Bring to a boil; cook just until tender, about 10 minutes.
Drain; return potatoes to pan. Add pork, beans, corn, and water; stir in honey mustard. Cook over medium heat, stirring occasionally, 10 minutes.
Pour into bowls; sprinkle with cheese. Serve with cornbread.
