Blender Potato-Garlic Soup
This easy, satisfying soup can be varied with the addition of crumbled bacon or a dash of nutmeg. For a thicker soup, just use more potatoes or less milk.

- 1½ cups leftover mashed potatoes
- 2 cloves garlic
- 1 green onion, minced
- 1½ cups hot milk
- Salt and pepper to taste
- ½ cup shredded Cheddar cheese
Warm mashed potatoes in microwave on high 1 minute; spoon into blender container.
Add garlic, green onion, and hot milk; pulse several times to combine. Blend on high speed 30 seconds; add salt and pepper and pulse once more.
Ladle soup into 2 bowls; garnish with shredded cheese. Serve immediately.
