Warm Ambrosia
Fresh fruit makes all the difference in this new take on an old classic.
INGREDIENTS | SERVES 4
- 1 cup diced fresh pineapple
- 1 cup fresh Clementine orange slices, pith removed
- ½ cup maraschino cherries
- ¼ cup flaked coconut
- 1 cup coconut milk
- 1 cup miniature marshmallows
- Whipped cream
Combine pineapple, oranges, cherries, coconut, and coconut milk in a saucepan.
Gently warm ingredients over medium heat, just until fruit is heated through, about 5 minutes.
Serve in bowls; top with miniature marshmallows and whipped cream.
Heavenly Fare
In Greek mythology, ambrosia was the magical food of the gods on Mount Olympus. Although ambrosia fruit salad pays homage to the Olympian treat, the popular dessert actually originated in the American south sometime in the late nineteenth century. Food historians credit the availability of dried coconut with inspiring the orange-pineapple-coconut dish. Later recipes added cream, marshmallows, bananas, cherries, and even gelatin to the mix.
