Peaches and Cream Soup
Make this soup from super-ripe peaches. Dice peaches over a bowl to catch any sweet juice that drips from the fruit.
INGREDIENTS | SERVES 4
- 1 cup water
- 1 cup sugar
- 3 cups diced fresh peaches
- 1 teaspoon vanilla
- 1 cup heavy cream
- 1 cup whipped cream
In a saucepan, combine water and sugar. Bring to a boil, stirring until sugar is dissolved. Remove from heat; allow to cool.
Add peaches and collected peach juice to sugar syrup; chill 2 hours.
Combine sugar syrup and peaches in a blender with vanilla; pulse to purée. Slowly add heavy cream; blend.
Pour into bowls and garnish with whipped cream.
