Peaches and Cream Soup

Make this soup from super-ripe peaches. Dice peaches over a bowl to catch any sweet juice that drips from the fruit.

INGREDIENTS | SERVES 4

  • 1 cup water
  • 1 cup sugar
  • 3 cups diced fresh peaches
  • 1 teaspoon vanilla
  • 1 cup heavy cream
  • 1 cup whipped cream
  1. In a saucepan, combine water and sugar. Bring to a boil, stirring until sugar is dissolved. Remove from heat; allow to cool.

  2. Add peaches and collected peach juice to sugar syrup; chill 2 hours.

  3. Combine sugar syrup and peaches in a blender with vanilla; pulse to purée. Slowly add heavy cream; blend.

  4. Pour into bowls and garnish with whipped cream.
