Simple Curry Chicken

This basic curry can be served with rice, preferably basmati. Dress it up with a variety of condiments if your schedule allows.

Pot size: 3–5 quarts

2 onions

3 pounds chicken breasts

¼ cup olive oil

⅓ cup curry powder

½ cup water

1. Dice the onions and cut the chicken into serving-size pieces. Sauté the onions in oil in a pan over medium heat until browned. Slowly stir in the curry powder, then add the chicken breasts and sauté over medium heat until lightly browned.

2. Put the chicken mixture and water in the slow cooker.

3. Cover and heat on a low setting for 2 to 3 hours.
