Apricots in Brandy

Try using a small round cookie cutter to cut your apricots for an attractive presentation.

2 pounds dried apricots

3 cups water

2 cups sugar

1 cup brandy

1. Halve the apricots with kitchen shears. Combine the apricots, water, and sugar in the slow cooker.

2. Cover and heat on a low setting for 3 to 4 hours. Stir once after the first hour to distribute the sugar.

3. An hour before serving, add the brandy.

Cutting Dried Fruit

Dip a clean pair of kitchen shears in hot water when cutting dried apricots, peaches, or other fruits. Chilling the fruit also helps, keeping them stiffer; the difference in temperature helps the blade cut more smoothly.
