This is a nice change from plain rice. The tart-and-tangy flavor is especially suitable as a side dish for wild game.

1. Cut the bacon into 1-inch pieces and sauté in a pan over medium heat until browned.
2. Add the shortening and let it melt, then transfer the bacon and fat to the slow cooker.
3. Mince the onion. Add the onion, rice, sauerkraut, and pepper to the slow cooker. Mix the ingredients well, then add the water and stir again.
4. Cover and heat on a low setting for 4 to 6 hours.
