Tropical Watermelon Salad in Strawberry-Ginger Sauce
This recipe works best if you chill the sauce in the refrigerator for at least 15 minutes before pouring it over the salad.
INGREDIENTS | SERVES 6
- ⅔ cup strawberries, diced
- ¼ cup water
- 3 tablespoons lime juice
- 3 tablespoons granulated sugar
- 1½ teaspoons candied ginger, finely minced
- ⅛ teaspoon kosher salt
- 3 cups seedless watermelon balls, small
- 1 cup honeydew melon balls, small
- 1 cup mango, diced
Combine strawberries, water, lime juice, sugar, ginger, and salt in a small saucepan over medium heat. Bring to a simmer, stirring occasionally, and reduce heat to low. Cover and let mixture simmer for 5 minutes.
Remove pan from heat, remove lid, mix, and let sauce cool for 5–10 minutes.
Pour cooled sauce into a blender. Blend on low until almost smooth.
Gently combine watermelon balls, honeydew balls, and mango in a large mixing bowl. Pour strawberry sauce over salad and toss gently to coat.
Garnish salad with slices of strawberry and a sprig of mint. Serve immediately.
