Apricot Jam

This is a sweet sauce that is good as a spread on raw crackers. It can be spread on celery sticks with almond butter for a satisfying snack. It can also be used as a filling for breakfast crepes.

INGREDIENTS | SERVES 4

  • 2 cups dried apricots
  • 2 tablespoons lemon juice
  • ½ cup water, for blending
  1. Soak the dried apricots in water for 15 minutes.

  2. Place all the ingredients except the water in a blender and blend together until it becomes a thick sauce. Gradually add the water until desired consistency is reached.
