Sweet Brazil Nut Milk

This is a good recipe to serve with a bowl of breakfast cereal or oatmeal. The milk makes a good liquid base for smoothies and sauces. The leftover pulp can be used to make cookies, crackers, and breads.

INGREDIENTS | SERVES 2

  • 1 cup Brazil nuts
  • 3 cups water
  • ¼ cup dates, pitted
  • ¼ teaspoon salt
  • ½ teaspoon pumpkin pie spice
  1. Blend the Brazil nuts with 3 cups water until smooth.

  2. Pour the blended Brazil nuts through a nut milk bag and into a bowl. Squeeze the nut milk bag to get all the milk out.

  3. Pour the milk back into the blender.

  4. Add the dates, salt, and pumpkin pie spice to the blender and blend until smooth.
