Pineapple Apricot Yogurt Smoothie

Yogurt is a traditional ingredient in smoothies. This recipe uses creamy blended cashews in place of yogurt.

INGREDIENTS | SERVES 2

  • 2 fresh apricots or 5 dried apricots
  • 2 plums, pitted
  • 1 cup soaked cashews
  • 1 cup water
  • 2 cups fresh pineapple juice
  1. Wash the fresh apricots or soak the dried apricots in water from 1 to 4 hours.

  2. Blend together the soaked cashews with 1 cup of water until it becomes smooth and creamy.

  3. Place all ingredients into the blender and blend together until smooth.
