Mango Salsa

A sweeter version of salsa, which is good served with wraps and with Mexican pâté. This salsa can also be used as a dip with slices of vegetables such as cucumber, celery, or zucchini.

INGREDIENTS | SERVES 2

  • ½ cup tomato, diced
  • 1 cup fresh mango, seeded and diced
  • ¼ cup white or red onion, diced
  • ¼ cup diced cucumber
  • ¼ teaspoon salt
  • ½ tablespoon minced jalapeño pepper
  • 1 tablespoon lime juice
  • 2 tablespoons minced fresh cilantro

Stir all the ingredients together in a bowl and let the mixture sit for 10 minutes in the refrigerator to marinate.
