Sunflower Raspberry Dressing
This is a delicious salad dressing to serve with the Arugula with Cranberries and Walnuts salad or the Oranges with Fresh Greens salad. Macadamia nuts or pine nuts are good substitutes for the sunflower seeds.
INGREDIENTS | SERVES 2
- ½ cup sunflower seeds, soaked for 6 hours
- 1 cup raspberries
- 2 tablespoons lemon juice
- ¼ cup water
Place all the ingredients, except the water, into a blender and blend until smooth. Gradually add the water until the dressing reaches the desired consistency.
