Spicy Coleslaw with Cashew Mayonnaise
This is a great side dish for the BBQ Chips or the Spanish Chile. For a little more kick add ¼ teaspoon mustard powder.
INGREDIENTS | SERVES 4
- ½ head red cabbage
- ½ head green or Napa cabbage
- ½ cup carrot
- ½ cup red onion
- ¼ cup daikon radish
- ½ teaspoon salt
- 2 tablespoons raw apple cider vinegar
- 1 cup Cashew Mayonnaise
- 1 teaspoon black pepper
Grate or shred the cabbages, carrot, onion, and radish using a mandolin, cheese grater, or the grater blade on a food processor.
Sprinkle the salt onto the shredded vegetables and mix together.
Pour on the apple cider vinegar, black pepper, and the cashew mayonnaise and mix everything together.
