Romaine with Tangerines or Oranges

This salad works well with all types of fresh herbs. Some good substitutions for the basil include mint, oregano, thyme, or rosemary. This salad is also delicious with simply olive oil and lemon juice.

INGREDIENTS | SERVES 2

  • ½ cup orange juice
  • 3 tablespoons extra-virgin olive oil or flax oil
  • 2 tablespoons fresh basil
  • 3–4 cups chopped romaine lettuce
  • 1 cup diced red bell pepper
  • ½ cup walnuts
  • 1 cup orange or tangerine slices
  1. Place the orange juice and the olive oil in a blender and blend together well. Add the basil to the blender and pulse briefly to mix.

  2. Place romaine lettuce and red bell pepper into a salad bowl and top with walnuts and orange or tangerine slices.

  3. Pour on the prepared salad dressing and mix well.
