Oranges with Fresh Greens

This is a delicious salad. The sweet and creamy dressing provides a nice contrast to the bitter arugula. In place of the escarole lettuce, you can substitute other types of salad greens. For the fresh mint you can substitute one teaspoon of dried mint or the fresh herbs of your choice.

INGREDIENTS | SERVES 4

  • 1½ cups arugula
  • 1½ cups escarole lettuce
  • ½ cup pine nuts
  • ½ cup orange juice
  • ½ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper powder
  • 1 tablespoon fresh mint, chopped (optional)
  • ¾ cup orange slices
  • 1 cup sliced avocado
  1. Rinse the arugula and escarole lettuce under water. Dry the lettuce with a salad spinner or pat dry with a clean paper towel.

  2. To create the dressing, use a blender or food processor and blend together pine nuts, orange juice, olive oil, salt, and cayenne pepper until smooth. Add the mint last (optional) and briefly pulse.

  3. Arrange the lettuce and arugula on salad plates. Top with orange and avocado slices.

  4. Drizzle the dressing over the salad and serve.
