Jicama "Potato" Salad

For presentation, sprinkle a little paprika on top. Tasty ingredients you could add include red bell peppers, scallions, add celery seed, mustard powder, or fresh or dried dill to taste. Serve with the Veggie Burgers.

INGREDIENTS | SERVES 2

  • 2 cups jicama, peeled and cut into cubes
  • ½ cup Cashew Mayonnaise (to taste)
  • ½ cup red onion, sliced thin
  • ½ cup hearts of celery, sliced thin
  • 1 tablespoon capers or olives
  • Salt and pepper to taste
  1. Mix the jicama and mayonnaise together until the jicama is well covered.

  2. Stir in onion, celery, and capers or olives, and mix well.

  3. Add the salt and freshly ground black pepper to taste.

Jicama

This root vegetable is also called a Mexican potato. It's found in most grocery stores and is used in many raw food recipes because of its pleasing crunchy texture and a balanced light, sweet, and starchy flavor. It resembles a potato but doesn't need to be cooked.
