Dandelion Greens with Tart Apples and Italian Dressing
This salad has a good balance of flavors with the bitter dandelion greens and tart apple. If you can't find dandelion greens, you can use endive, frisée greens, or other fresh greens. This salad is delicious simply with olive oil and a little salt, or olive oil and lemon juice.
INGREDIENTS | SERVES 2
- Salt to taste
- 2 tablespoons olive oil
- 3 tablespoons lemon juice
- 1–2 teaspoons Italian seasoning (optional)
- 1 small Granny Smith or Braeburn apple, diced with skin on
- 2 cups dandelion greens
- 1 cup romaine lettuce
To make the Italian dressing, blend together the salt, olive oil, lemon juice, and Italian seasoning until smooth.
Put the diced apple in the bottom of a small bowl.
Chop greens and lettuce and place over the apple chunks.
Drizzle the dressing over the salad and serve.

Granny Smith Apples
Granny Smith apples are good with salads because they are quite stable and retain their color (rather than turning brown). You could use any tart apple with this recipe if the salad will be eaten quickly or if you sprinkle the apple with a little lemon juice.
