Creamy Avocado Salad
This is a perfect summer salad. The red leaf lettuce balances the tang of the spinach, and the cayenne adds sweet and spicy flavors.
INGREDIENTS | SERVES 4
- 2 cups red leaf lettuce
- 1 cup spinach
- 1½ cups sliced avocado
- 1½ cups diced tomatoes
- 2 tablespoons lemon juice
- ¼ teaspoon cayenne pepper powder
- 2 tablespoons basil, minced (optional)
- ½ cup scallions
Wash and dry the lettuce and spinach.
To make the dressing, use a food processor or blender and blend together 1 cup avocado with 1 cup tomato, lemon juice, and cayenne until smooth. Add the basil and briefly pulse.
Place the remaining avocado, lettuce, and spinach in a salad bowl. Top with diced tomato and scallions.
Drizzle the dressing over the salad.
