Cool Cucumber Salad Dressing
The cucumber supplies the liquid to help blend the cashews into a cream. More cucumber can be added for a thinner dressing, or add more cashews for a thicker sauce.
INGREDIENTS | SERVES 2
- 1 cup cucumber
- 1 cup cashews
- 2 tablespoons dill
- ¼ cup celery
Place all ingredients into a blender. Blend until smooth.

Salad Dressing
Raw salad dressings are easy to prepare. Most of the bottled salad dressings in the grocery store contain unhealthy ingredients such as cooked vegetable oils and processed sugars. The two main ingredients of a salad dressing are the fat content and an acidic ingredient to emulsify the fat. Good choices for healthy fats include avocado, extra-virgin oil, nuts, or seeds. The acidic component may consist of lemon, lime, or orange juice; acidic fruits; apple cider vinegar; balsamic vinegar; or ume plum vinegar.
