Classic Cucumber Salad

This is a good salad to serve with miso soup and spring rolls.

INGREDIENTS | SERVES 2

  • 2 tablespoons dill, or diced fresh rosemary, oregano, thyme
  • 3 tablespoons lemon juice
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sesame seeds
  • 1 teaspoon sesame oil
  • 1 tablespoon agave nectar
  • 2 cups cucumber, sliced into thin rounds
  1. In a small bowl, combine the dill, lemon juice, balsamic vinegar, sesame seeds, sesame oil, and agave nectar.

  2. Toss cucumbers with the sesame mixture and serve.
