Carrot and Red Cabbage Salad with Cashew Mayonnaise
This is a delicious, simple salad. Some good additions to this recipe include red bell pepper and beets, or red apples and lemon juice.
INGREDIENTS | SERVES 2
- 1½ cups sliced red cabbage
- 1½ cups carrots (or more), sliced into thin ribbons
- ¾ cup Cashew Mayonnaise
- 3 tablespoons sesame seeds (to taste)
Mix the vegetables together with the cashew mayonnaise until they are well coated. Sprinkle the sesame seeds on top and serve in a salad bowl.
