Cashew Sour Cream

This is delicious served with wraps, sandwiches, taco salad, collard wraps, and chile con carne. To achieve a more tart flavor, the blended cream can be mixed with 1 tablespoon miso, Rejuvelac, or ½ teaspoon probiotic powder. Let the cream sit at room temperature for 6 to 8 hours.

INGREDIENTS | SERVES 2

  • 1 cup cashews, soaked
  • 1 cup water
  • 2 tablespoons lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

In a food processor or high powered blender, blend all ingredients into a thick and smooth cream. Add a little more water if needed.
