Sunny Fruit Parfait

This is a delicious fruit salad to serve for breakfast or a late-night snack. If you'd like, you can add sprouted or soaked buckwheat to give this recipe a nice granola crunch. Good alternatives for the sunflower seeds include cashews, macadamia nuts, or pine nuts.

INGREDIENTS | SERVES 2

  • ½ cup sunflower seeds
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon agave nectar
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ½ cup strawberries, sliced
  • ½ cup banana, sliced
  • ½ cup blackberries
  1. Soak sunflower seeds for 6 to 8 hours. Drain and rinse.

  2. Place the sunflower seeds, the lemon juice, lemon zest, agave nectar, vanilla, and cinnamon in a blender and blend until smooth.

  3. Place a layer of strawberries on the bottom of a dessert bowl or glass. Place a layer of the prepared sunflower cream on top of the strawberries. Place a layer of banana and blackberries on top of the cream, followed by a second layer of cream.

  4. Top off the parfait with blackberries, strawberries, and bananas.
