Taco Salad
Quick prep: To bring out the flavor, cut a head of lettuce in half and then slice off thin layers, which creates fine ribbons of the lettuce that are ideal for wraps or pocket sandwiches.
INGREDIENTS | SERVES 2
- 2 cups shredded iceberg lettuce
- 1 cup Mexican Pâté
- 1 cup chopped tomato
- 1 cup avocado, sliced
- ½ cup corn, cut fresh off the cob
- 1 cup Simple Salsa
- ¼ cup Cashew Sour Cream
On salad plates, place a layer of lettuce.
Top with Mexican pâté, tomato, avocado, corn, and salsa.
Place a scoop of Cashew Sour Cream on top and serve.

Iceberg Lettuce
Sometimes called crisp head lettuce, iceberg is a dense, tight head that resembles cabbage. Bred to remove the bitterness from the lettuce, it is one of the most popular lettuce varieties because of its mild taste and crunchy texture. Although it is low in nutrients compared to other nutrient-dense leafy green vegetables, iceberg lettuce is a natural refrigerant (cooling food), so it is ideal for hot summer dishes.
