Taco Salad

Quick prep: To bring out the flavor, cut a head of lettuce in half and then slice off thin layers, which creates fine ribbons of the lettuce that are ideal for wraps or pocket sandwiches.

INGREDIENTS | SERVES 2

  1. On salad plates, place a layer of lettuce.

  2. Top with Mexican pâté, tomato, avocado, corn, and salsa.

  3. Place a scoop of Cashew Sour Cream on top and serve.

Iceberg Lettuce

Sometimes called crisp head lettuce, iceberg is a dense, tight head that resembles cabbage.
