Strawberry Vanilla Ice Cream

This is a smooth and creamy ice cream that can be served with desserts such as cakes, cookies, and pies. The lecithin holds the mixture together and creates the thick, ice cream consistency. Dates can be used instead of agave.

INGREDIENTS | SERVES 4

  • 1 cup Almond Milk
  • 1 cup cashews
  • ½ cup organic strawberries
  • 4 tablespoons agave nectar
  • 1 tablespoon lecithin
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  1. Add the Almond Milk and cashews into a blender and blend until smooth.

  2. Add the remaining ingredients and blend together until smooth and creamy.

  3. Place into an ice cream maker and follow the manufacturer's directions. Alternatively, place the mixture in the freezer; stir the ice cream once an hour until frozen.
