Pear Crepes
These are delicious wraps to serve for breakfast. The pears can be replaced with other fresh fruits in season.
INGREDIENTS | SERVES 4
- 2 cups young coconut meat
- 4 cups pear, chopped
- 2 cups sliced banana
- 1 cup Strawberry Date Sauce or Raspberry Sauce
Place the coconut meat and pear in a blender and blend until smooth.
Spread the blended mixture onto dehydrator trays with nonstick sheets. Dehydrate at 115°F for 4 hours to make fruit leathers.
Score leathers into round circles, approximately 8″ in diameter.
Mash the banana with a fork. Place a round fruit leather on a plate and spread a layer of mashed banana on top. Roll it up into a crepe shape.
Place the crepe rolls on a plate and cover with Strawberry Date Sauce.
