Banana Crepes
These are delicious wraps to serve for breakfast. Freshly sliced fruits and berries make a good garnish. A good replacement for the banana leathers is the young Coconut Wraps.
INGREDIENTS | SERVES 2
- 2 Banana Leathers
- ½ cup Coconut Cream
- ½ cup Strawberry Date Sauce or Apricot Jam
- ½ cup sliced strawberries
Begin to make the Banana Leather recipe, but rather than cutting the leather into strips, score it into circles. Lay each banana leather flat on the plate.
Spread a layer of coconut cream onto the banana leather.
Tightly roll up the banana leather into a crepe.
Drizzle the Strawberry Date Sauce over the crepes and garnish each with sliced strawberries.
