Cauliflower with Cheese

Cauliflower may not be everyone’s favorite vegetable, but don’t let that prejudice prevent you from serving it to your toddler. Serving it up with melted cheese is a perfect way to encourage him to try a new taste.

INGREDIENTS | YIELDS 1 SERVING

½ cup cauliflower

2 cups water

2 ounces cheese

1. Wash the cauliflower, dice into small florets, and place in a steamer basket. Fill the bottom of a saucepan with water, place the steamer basket inside, then bring to a boil. Cook for 15 minutes, or until the cauliflower is tender.

2. Melt the cheese in a microwave-safe bowl. Heat in the microwave in 30-second intervals, stirring in between, until well melted.

3. Place the cooked cauliflower in a bowl and pour the melted cheese on top.
