Mandarin Orange Salad
The sweet taste of mandarin oranges adds something extra to a plain cottage cheese salad. For a special touch, top the salad with walnuts halves or candied (sugared) walnuts.
Serves 4
Preparation time: 10 minutes
¼ teaspoon black pepper
¼ teaspoon salt
1 cup low-fat cottage cheese
¼ cup reserved mandarin orange juice
1 teaspoon granulated sugar
1 head romaine lettuce leaves, washed, drained, torn
2 green onions, finely chopped
½ medium red onion, peeled and chopped
2 (10-ounce) cans mandarin oranges, drained
In a medium bowl, stir the pepper and salt into the cottage cheese. Stir in the mandarin orange juice and sugar.
Put the torn romaine lettuce leaves in a salad bowl. Toss with the onions.
Add the cottage cheese and the mandarin oranges on top.
Serve immediately, or chill until ready to serve.
Make-Ahead Salads
Many of the vegetables found in a typical salad, including lettuce, can be prepared ahead of time. Wrap the cut vegetables in paper towels and store in a resealable plastic bag in the crisper section of your refrigerator until ready to use.
