Spanish Rice Side Dish
This simple side dish is incredibly easy to make. To turn it into a main meal, simply add 2 cups of cooked shrimp or leftover cooked chicken.

INGREDIENTS | SERVES 4
- ⅔ cup tomato juice
- 1⅓ cups water
- 2 cups instant rice
- ½ teaspoon salt, or to taste
- ⅛ teaspoon black pepper
- 1 tablespoon olive oil, divided
- 2 cloves garlic, chopped
- 1 onion, chopped
- 1 teaspoon paprika, or to taste
- 1 green bell pepper, chopped into chunks
In a saucepan, bring the tomato juice and water to a boil. Stir in the rice, salt, and pepper. Remove from the heat, cover, and let stand for 5 minutes.
While the rice is cooking, prepare the vegetables: Heat the olive oil in a heavy skillet or wok on medium-high heat. Add the garlic and onion. Sprinkle the paprika over the onion and sauté for about 2 minutes, until the onion begins to soften.
Add the green pepper and continue cooking until the vegetables are softened.
Stir the cooked vegetables into the rice. Stir with a fork before serving.
