Quick Fried Minted Lamb

Traditionally, mint jelly is paired with roast leg of lamb, but it also goes nicely with quicker-cooking lamb cuts. You can spice up the mint jelly by adding a pinch of cayenne pepper.

INGREDIENTS | SERVES 4

  • 8 lamb rib chops, 1″ thick
  • ½ cup mint jelly, or as needed
  1. Preheat the broiler. Spray a broiling rack with nonstick cooking spray.

  2. Place the lamb chops on a rack about 4 inches from the heat source. Broil the chops for 8 to 10 minutes, turning once, until they are cooked through.

  3. Serve the lamb with the mint jelly.

Make Your Own Mint Sauce

Instead of mint jelly, you can make your own mint sauce for this Quick Fried Minted Lamb. Simply process fresh mint leaves with a small amount of apple juice, white wine vinegar, and sugar to taste until you have a thick sauce. Season the sauce with salt and pepper to taste. For best results, prepare the mint sauce one hour ahead of time to give the flavors a chance to blend.
