Leftover Sausage and Potato Casserole
Leftover Instant Mashed Potato Salad (page 64) would work well in this dish. For a quick and easy dinner, serve the casserole with Basic Spinach Salad (page 71).
Serves 2
Preparation time: 2–3 minutes
Cooking time: 10 minutes
2 tablespoons chopped red onion
2 teaspoons butter or margarine
2 cooked sausages, thinly sliced
¾ cup leftover mashed potatoes
¾ cup canned tomato sauce
2 teaspoons balsamic vinegar
¼ teaspoon dried basil leaves
¼ teaspoon dried oregano
⅛ teaspoon black pepper, or to taste
Place the onion and butter or margarine in a 1-quart microwave-safe casserole dish. Microwave on high heat until the onion is softened.
Add the sliced sausage. Spoon the potatoes on top.
In a medium bowl, stir together the tomato sauce, balsamic vinegar, basil, oregano, and pepper. Pour over the sausage and potatoes.
Cover the casserole loosely with plastic wrap, leaving an opening on one end for steam to vent
Microwave on high heat for 4 minutes. Rotate the dish and microwave on medium-high heat for 3 to 4 more minutes, or until heated through.
