Italian-Inspired Bruschetta

Using canned diced tomatoes with seasonings means there is no need to chop and seed tomatoes in this take on the popular Italian appetizer.

Preparation time: 5 minutes
Cooking time: 2 minutes

INGREDIENTS | SERVES 8

  • 2 cloves garlic
  • 8 slices crusty French or Italian bread
  • ¾ cup diced tomatoes with basil and garlic
  • 1½ tablespoons extra virgin olive oil
  • Salt and pepper, to taste
  • ½ cup grated Parmesan cheese
  1. Preheat the broiler on high heat. Spray a broiling rack with nonstick cooking spray.

  2. Cut the garlic cloves in half. Rub both sides of each slice of bread with a garlic clove half.

  3. In a medium bowl, stir together the diced tomatoes and olive oil. Season with salt and pepper to taste.

  4. Spread the tomato mixture over each slice of bread. Sprinkle the Parmesan cheese on top

  5. Lay the bread slices out on the rack. Broil the toast on high heat for up to 2 minutes, until the cheese has melted and the bread is toasted.
